minutosA traditional Middle Eastern dish. Easy and quick to prepare, full of protein and vegetables. Perfect as a light dinner with salad.
In this recipe I use 3 colours of peppers, because it looks so nice and each one has its own flavour, but the truth is that you can use any color of bell pepper.
Ingredients:
1 large onion
2-3 peeled and grated garlic cloves
1/2 red bell pepper
1/2 green bell pepper
1/2 yellow bell pepper
Extra virgin olive oil
3-4 diced tomatoes
1-2 tablespoons of concentrated tomatoes
2 teaspoons cumin powder
1 teaspoon coriander powder
You can add hot pepper or chili pepper, or chop a chili pepper
Salt and black pepper
4 eggs
Optional- fresh cilantro or parsley for garnish
Method:
- Cut the onion in half and then into thin slices.
- Cut the peppers into thin strips.
- In a frying pan with olive oil, cook the onion and after a few minutes add the peppers and garlic. Cook them for a few minutes until they are softer.
- Add the tomato concentrate and mix well, then add the tomato cubes and mix everything together.
- Now it is time to add the spices and salt and pepper to taste.
- Lower the heat and let it cook until the tomatoes are cooked.
- Turn up the heat and add the eggs on top of the ratatouille. Season the eggs with salt and pepper to taste.
- When the bubbles start to form, cover the pan and let it cook for about 10 minutes over low heat until the egg whites are fully cooked.
