A traditional Middle Eastern dish. Easy and quick to prepare, full of protein and vegetables. Perfect as a light dinner with salad.
In this recipe I use 3 colours of peppers, because it looks so nice and each one has its own flavour, but the truth is that you can use any color of bell pepper.

Ingredients:

  • 1 large onion

  • 2-3 peeled and grated garlic cloves

  • 1/2 red bell pepper

  • 1/2 green bell pepper

  • 1/2 yellow bell pepper

  • Extra virgin olive oil

  • 3-4 diced tomatoes

  • 1-2 tablespoons of concentrated tomatoes

  • 2 teaspoons cumin powder

  • 1 teaspoon coriander powder

  • You can add hot pepper or chili pepper, or chop a chili pepper

  • Salt and black pepper

  • 4 eggs

  • Optional- fresh cilantro or parsley for garnish

Method:

  • Cut the onion in half and then into thin slices.
  • Cut the peppers into thin strips.
  • In a frying pan with olive oil, cook the onion and after a few minutes add the peppers and garlic. Cook them for a few minutes until they are softer.
  • Add the tomato concentrate and mix well, then add the tomato cubes and mix everything together.
  • Now it is time to add the spices and salt and pepper to taste.
  • Lower the heat and let it cook until the tomatoes are cooked.
  • Turn up the heat and add the eggs on top of the ratatouille. Season the eggs with salt and pepper to taste.
  • When the bubbles start to form, cover the pan and let it cook for about 10 minutes over low heat until the egg whites are fully cooked.
  • Enjoy!
