This recipe prepares one jar of sauce which is enough for 2-3 meals. It can be easily stored in the refrigerator for 2-3 weeks. Add to the pan or heat for a while in a pot.
Ingredients:
6 Tbsp. of Sake (or white wine)
6 Tbsp. of rice vinegar
6 Tbsp. of Tamari sauce
Stevia to taste (about 6-10 drops)
1/4 teaspoon guar gum
Sesame seeds
Method:
- Cook the Sake and vinegar in a small saucepan until the alcohol vaporizes and you can’t smell it anymore.
- Add the tamari and a few drops of Stevia (better a few, taste it and add if necessary) until you get the flavor you like.
- Mix everything well and leave it on low heat for about 2 more minutes.
- Add the guar gum and mix to incorporate it well into the sauce.
- Turn off the heat and add some sesame seeds.
- The sauce should come out somewhat thick and silky. If it comes out too thick, you can add a tablespoon of each of the liquid ingredients and taste and adjust with stevia.
- Keep refrigerated
