Coconut Cookies

minutesSuper easy and quick to make. Keep well in the fridge. And what’s more: satiating, add extra proteins and healthy fats to our day!
Ingredients:
3 egg whites
A pinch of salt
130g ground coconut
A pinch of vanilla extract
Sweetener (with my deviation I used 14 drops of stevia to reach the desired sweetness)
Optional: 100g chocolate 85% +
Method:
- Preheat the oven to 180 degrees
- Beat the eggs with a pinch of salt until they form a firm foam.
- Add sweetener and vanilla extract and beat for another minute
- Gently pour the coconut over the foam and, using a spoon, gently fold the coconut with the foam so that the airy texture remains as much as possible.
- Place baking paper on a flat baking sheet and using two spoons, or your hands, form the cookies
- Place the baking sheet in the preheated oven to bake for about 10-13 minutes (till the get a golden edge)
- When the cookies have cooled completely, you can dip their base in dark chocolate (or even dip the entire cookie). Place on a plate with baking paper and put in the refrigerator until the chocolate hardens.
- Transfer the cookies to a tightly closed container. They will keep in the refrigerator for at least a week (if not eaten first 😜)
