A classic sauce that's perfect for any occasion, and when the rest of the family is craving Italian pasta, we can easily join in! Using zucchini noodles makes the meal not only delicious but also much easier to digest and even more packed with fiber.

Ingredients:

  • 500g minced beef

  • Olive oil

  • 1 chopped onion

  • 2 (or more) minced/grated garlic cloves

  • 1 chopped carrot

  • 1 diced or finely sliced celery stalk

  • 1 can of crushed tomatoes

  • 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp smoked paprika or chili powder, and oregano

  • 2 bay leaves

  • Optional: diced red bell pepper, sliced mushrooms

  • For the "spaghetti": Approximately 1 small zucchini per person

Directions:

  • Pour a generous amount of olive oil into a deep frying pan.
  • Add the onion and sauté until translucent for a few minutes.
  • Add the carrot, celery, bay leaf, and chopped garlic (or add more vegetables if you like) and continue to stir in the pan for a few more minutes.
  • Add the meat and spices and stir in the pan until the meat is cooked through.
  • Now you can add the crushed tomatoes and mix well.
  • Let it simmer, covered, for about 30-40 minutes.
  • While the sauce is cooking, you can spiralise the zucchini (there's a video below showing how).
  • On your plate, place the spiralised zucchini, the sauce, and top with Parmesan cheese…delicious!
