Easy to make, satiating and delicious bread. The texture allows for easy cutting and can also be frozen in slices!

Ingredients:

  • 1/2 cup finely ground coconut flour

  • 1/3 cup ground flax seeds (a combination of flax and chia can also be used)

  • 1 tsp. baking powder

  • 1/2 tsp. salt (or to taste)

  • 4 eggs

  • 1 Tbsp. apple cider vinegar

  • 1/2 cup olive oil or melted coconut

  • 1/3 almond or coconut milk

  • Topping – you can make a seed mixture – (in the photo: flax, chia and sesame with the addition of garlic powder), or whatever you like – sunflower seeds, pumpkin … as far as your imagination goes.

Method:

  • Preheat the oven to 175 degrees.
  • Grease a bread mold, or use a silicone one without greasing.
  • Put the eggs in a large bowl and beat well. Add the rest of the wet ingredients to the eggs and mix.
    Note: If you want even lighter and airier bread, you can separate the eggs, beat the egg whites separately and “fold” them into the dough. )
  • Add the ground flax and mix everything well.
  • Put the mixture into the pan you prepared in advance and level it with a spoon or spatula. Scatter the seeds/grains and put in the oven. Bake 30-40 minutes or untill ready (when you insert a knife or skewer into the center and it comes out dry).
