When you eat them warm, they taste like mini quiches or savoury cup cakes. When cooled down thgey can make perfect sandwiches, or even used for a yummy cheese toast. you can even prepare them flat on a baking paper and use them as a sort of a wrap! Super simple and quickly ready with ingredients that most people have at home.

Ingredients:

  • 2 eggs

  • 1 cottage cheese or greek yogurt

  • 1/2 a cup of shredded goat cheese

  • 1 tsp. baking powder

  • 1 cup almond flour

  • Optional garnish or alternatives: olives, dried tomatoes, oregano, garlic powder...

Method:

  • Preheat the oven to 180 degrees
  • Mix all ingredients (If using olives and /pr dried tomatoes, add them later), If using cottage and you don't want the lumpy structure- put all ingredients in a blender and blend till smooth.
  • Pour into muffin forms or flatten on a baking paper and bake in the oven until golden brown. (10-15 min. in most ovens)
