Almond & Cheese Bagels

With olive oil and za’atar on top and a salad on the side, we’re all set!
Keep in mind that almond flour bread is much more satisfying than wheat bread, so it’s best to make a medium-sized bagel or buns- not bigger. this recipe is also excellent for making hamburger buns.

Ingredients:

  • 230 g finely ground almond flour (or peeled almonds ground at home)

  • 130-150 g grated hard cheese (preferably high-fat and sheep’s cheese)

  • 2 eggs (one can be replaced by chia egg)

  • 1 tsp. baking powder

  • 1 tsp. salt

  • 1 tsp. apple cider vinegar

  • 1 tsp. guar gum

  • Additional topping – sesame seeds or a seed mixture. (It’s also delicious to add garlic powder to the mixture).

Method:

  • Prepare a flat baking pan with baking paper on top
  • Preheat the oven to 175 degrees
  • Put all the dry ingredients in a bowl and mix well.
  • Add the wet ingredients and knead into a relatively uniform dough.
  • Divide the dough into 6-8 pieces (depending on the size of the bagel you want)
  • Roll each piece into a “sausage” (like we did with plasticine in the garden :)) and connect the two ends to form a ring.
  • Place the bagel on the baking sheet, sprinkle with the seeds (you can brush with an egg or a little almond milk first so that the seeds stick better)
  • Put in the oven and bake for about 15-20 minutes.

Notes

  • The bagel taste delicious when fresh. But…
    1. If you want to store some: put them in a box or a tightly closed bag, you can enjoy them the next day too, otherwise they dry out a lot and are more like salty cookies.
    2. You can make a batch in advance and freeze before baking: Before you sprinkle the seeds, place them on a flat dish with baking paper that fits in the freezer and freeze for a few hours. When they are frozen, put them in a bag and freeze in a way that takes up less space. When you feel like a bagel , simply place it on a baking sheet lined with parchment paper straight from the freezer. Brush with a little egg or almond milk, sprinkle with sesame seeds, and place in the preheated oven.
