Amazingly creamy and delicious!

Ingredients:

  • For the crust:
    1 cup ground almonds or almond flour

  • 50 gr. Melted butter

  • A few chopped walnuts (for texture)

  • ¼ tsp. Vanilla extract

  • 5 drops Stevia

  • A pinch of salt

  • ¼ tsp. Cinnamon

    For the filling:

  • 400 gr. Cream cheese (38%+)   

  • 3 eggs

  • 1 sour cream

  • Zest of one lemon

  • Juice of ½ lemon

  • Vanilla to taste

  • Stevia to taste (10-20 drops depending on the brand)

  • Optional- berries or edible flowers for decoration

Method:

  • Preheat the oven on 175-180 degrees
  • Line the bottom of a round baking tin with baking paper.
  • In a bowl, place the ingredients of the crust and mix well till well combined.
  • Put the crust mixture into the tin, spread well, and with a bottom of a glass, or with the palm of your hand, press well till you have a firm round base.
  • Place the tin in the oven and bake for 10-13 minutes or until it gets golden (depending on the oven)
  • Meanwhile, in a clean bowl, place the ingredients of the filling WITHOUT the eggs. Mix well and taste. Add stevia if you feel needed. It should be just a tiny little bit sweeter than needed, since you than add the eggs which will dilute the taste a bit.
  • Add the eggs, mix well till you have a nice creamy texture.
  • Pour the mixture on the crust of the cake and bake for another 30-40 minutes until firm. (You can check it by holding the tin with a towel or mittens and shake it slightly. It shouldn’t look wobbly 🤪)
  • Let the cake cool of thoroughly before covering and placing in the fridge. Optionally you can decorate with strawberry’s, blueberries or beautiful edible flowers.
