Beef Stroganoff-slow cooked

the slow cooking process get the most of the qualities out of the meet and into the sauce, leaving us a meal rich in health amino acids, collagen, and easier to digest.
youll need an pan with a thick bottom for a slow cook process, or a slow cooker.
Ingredients:
1,5 kg beef chuck or other stewing beef , cut in bite-sized cubes
1,5 tsp. each sea salt and pepper
2 Tbsp. Beef tallow (or butter)
700 gr. mushrooms
1 Tbsp. butter , unsalted
1 large onion , halved then sliced
4 garlic cloves , minced
4 Tbsp. Dijon Mustard
300 g sour cream , full fat best
1 litre beef stock/broth
salt and pepper for seasoning
Method:
- Put he beef cubes in a bowl and season them well with sea salt and pepper
- Melt the beef tallow and place the cubes of meat in your pan. Do it in batches as to not over crowd the pan. After a few minutes, turn the pieces and repeating this process let all sides brown and caramelise nicely. Set aside and repeat until all your meat is done.
- To the same pan, add the onions and sauté them for 2-3 minutes. Than add the Dijon and mix well. Add the meat and cover with the bone broth (or stock)
- Bring to boil and then turn the fire to low, or set in the oven for about 3 hours.
- Meanwhile, melt your butter, add the garlic and sauté while stirring until fragrant (don’t let it burn). Add the mushrooms and don’t stir them too often, so they, like the meat, will get a nice brownish caramelised look and taste. Set aside.
- Every hour or so, check on your meat to make sure it doesn’t get too dry (if so, you can add some more broth or warm water).
- When the meat is nice and soft and falling apart, spoon into a separate bowl a ladle of the sauce. Add the sour cream and stir well. (If you add the sour cream directly without tempering it first it could make the sauce lumpy).
- add the tempered sour cream and the mushrooms into the pan, stir well and cook for a few more minutes.
serve with a salad, cooked vegetables, and if you wish, a slice or two of one of our beautiful breads.
