Broccoli & veg. Balls

These are delicious and light for a main course, or can be made smaller as a snack. A nice way to get a good amount of veg from the cruciferous family in (helping us keep our liver in shape), and an easy way to get young kids to eat more vegetables:) a win-win situation!

Ingredients:

  • 1 broccoli

  • 1 grated carrot

  • a bunch of green onions

  • 2 cloves of garlic

  • Optional- some parsley

  • 2 eggs

  • 150gr cheese to your liking (hard with 38%+ fat)

  • 4-5 spoons of almond flour

Method:

  • Cut the broccoli into florets and cook in water with a pinch of salt until the broccoli gets a bright green colour.
  • Drain the water and let cool down a bit. Once cooled, chop the broccoli with a chef’s knife.
  • In a bowl, combine the broccoli with the rest of the ingredients and mix well.
  • Preheat the oven to 175 degrees
  • Line a baking sheet with parchment paper
  • with humid hands, form ping pong size balls and lay them on the baking paper
  • bake for about 30 minutes till nice and crispy.

Notes

  • Alternatives: you can choose to add some grated cheese on the broccoli balls once ready, and put them back in the oven for a few extra minutes
