My mom used to make really special picnics. She cooked ahead and prepared delicious meals that were carefully stored in boxes and containers. we even had plates and cutlery and hot tea.. Gourmet picnic:) On Saturday mornings we used to leave home very early and have a day in nature. sometimes looking for wild mushrooms, other times to see some rare flower that blooms for a limited season somewhere on a mountain...
And almost always, meat loaf was part of the picnic menu! Can be eaten warm or called (it tastes better the next day:))
So in honour of my Mamoushka, who doesn't cook anymore (95), maybe this will become part of your picnics ❤️

Ingredients:

  • 1 kg. ground beef, turkey or chicken

  • 3-4 hard boiled eggs

  • Finely chopped onion

  • Spices of choice (cumin, cilantro, garlic powder, paprika-sweet or spicy, salt and pepper) check the notes below for variations

  • For brushing:
  • 1/4 cup olive oil

  • Salt to taste

  • 1 Tbsp. smoked paprika

  • 1/2 tsp. cumin

  • You will also need cling foil to roll it in or a loaf tin to bake in

Method:

  • Mix the ground meat with all the spices you choose
  • Option 1: Lay a sheet of plastic on a clean counter. Lay the ground meat in a flat layer on top and place the eggs in the middle. Roll one side of the foil onto the eggs, press firmly and peel off the pastic. Then roll the other side to form a "sausage". roll the plastic now all around, and roll our both sides like a paper of a candy. (Continue to stage 4)
  • Option 2:If you prefer not to use plastic or don't have it at home: grease a loaf tin with some olive oil, butter, ghee or tallow. lay half of the meat in the tin. Place the eggs in the center and cover them woth the other half, forming a loaf shape with your hands.
  • Set whichever of the two options you chose in the fridge for an hour or two to set.
  • Preheat the oven to 180 degrees
  • Brush your meatloaf with the brushing mixture and bake for 30-40 minutes (depending of your oven).
  • Let cool a little before serving (to make it easier to cut), Or let cool completely and keep in a closed container in the fridge, to be served the nest day with a salad, or in a sandwich.

Notes

  • You can choose to take this recioe to an aziatic direction, replacing the paprika with garlic and ginger paste, adding some soy or chilli (or both) and some fresh coriander. Than brush with some oil+sweet soy sauce and chilli, or normal soy sauce and a touch of stevia.
