Malabi (A coconut & Rose dessert)

Malabi is a popular Middle Eastern dessert originated in Turkey, but found its way, with changes into the Israeli and Arab world. Its creamy and not too sweet, and is a perfect light way to finish a meal. Rich in healthy fats that will help you feel satiated for long hours, a good support for your hormonal system, and the coconut being one of the best ingredients to support the thyroid.

Ingredients:

  • For the coconut base base:
  • 400 ml. of high quality coconut cream

  • 1 Tbsp. (or more) Rose water

  • 10-15 drops stevia or other sweetner of choice

  • +/- 1 tsp. Guar gum

  • For the red sauce:
  • 1 cup boiling water

  • 1 Tbsp. hibiscus blossom

  • 1,5-2 Tbsp. rose water

  • Optional rose petals

  • +/- 1 tsp. guar gum

  • For the topping:
  • Some shredded coconut and some chopped pistachios

Method:

  • Pour the coconut cream to a pan and warm it up until all fat is dissolve and the consistency is nice and creamy.
  • Remove from heat and add the rose water and the sweetener. Mix well
  • Using a sieve, gently sprinkle the guar gum powder and mix well. Make sure there are no lumps. Continue mixing while you see that the mixture becomes thicker and creamier.
  • Pour into glass cups, cover with a plate or cling film and refrigirate for about an hour untill firm.
  • Place the hibiscus and rose petals in a heat-resistant pot and pour the boiling water over them. Let the mixture reach a lukewarm state.
  • Strain the leaves and add the rose water and sweetener.
  • Mix well and add the guar gum as described for the coconut cream. (If you want the res layer to be more liquid, add less guar gum)
  • Pour the red sauce over the coconut cream and return to the refrigerator to set.
  • Decorate and enjoy:)
