Homemade Marzipan

This marzipan is a great little treat after a meal. It adds healthy fats that help us stay full for longer, feed our cells and also give us energy!
(Each ball measures more or less 3/4 of a fat portion)

Ingredients:

  • 200 gr. ground white almonds (raw or lightly toasted)

  • Pinch of Himalayan salt

  • Lemon juice to taste (0.5 to 1 lemon)

  • Stevia to taste (you won’t need more than 5-8 drops)

Method:

  • Put the almonds, salt, 3-4 drops of stevia and the lemon in a bowl and start kneading everything well. When you have a nice dough, taste it and see if it lacks sweetness (stevia) or acidity (lemon). Add to taste until you have a nice dough!
  • Now, either flatten it between two kitchen papers and cut it into shapes, or roll it in your hands to form balls or any shape you like.
  • You can decorate it with almonds, 85% (or more) melted chocolate or whatever your imagination comes up with:)
