Peanut Butter Pie

Delicious! Easy to make, few ingredients and your family and friends won’t even notice that it doesn’t contain grains nor sugars!

Ingredients:

  • For the Base:
  • 1 ¼ cups ground peeled almonds

  • ¼ cup cocoa powder

  • ½ teaspoon baking powder

  • ½ teaspoon guar gum (if you have it..)

  • ¼ teaspoon Himalayan salt

  • 4 tablespoons cold butter (!)

  • 1 teaspoon of vanilla

  • For the Cream:
  • ¾ cup of 100% peanut butter

  • Stevia….I only use 3-4 drops but this depends on your taste

  • ¾ cup of whipping cream

Method:








  • Preheat the oven to 180 degrees.
  • Put the almonds, coconut flour, cocoa, baking powder, guar gum and salt in a food processor and pulse a few times until everything is well mixed.
  • Add the butter and vanilla and mix everything well until you have a floury cookie dough that you can shape between your fingers. If not, you can add a teaspoon of cold water.
  • Put baking paper in your pie dish.
  • Divide the dough well over the base and with your hand press it down and form a low edge around it.
  • Put the dish in the oven for about 9 minutes.
  • Remove from the oven and let cool
  • Meanwhile, in a large bowl, mix the peanut butter and stevia well
  • Using a mixer, whip the cream until firm
  • Add a third of the cream to the bowl and mix it with the peanut butter
  • Add the rest of the cream and carefully fold until you have a light creamy mixture.
  • Divide the cream evenly over the biscuit base and put covered in the fridge for at least half an hour.
  • Now it’s time to decorate! Blueberries give it a yummy sweet sour crunch,melted chocolate (85%) drizzled on top, chopped peanuts/hazelnuts or…the combination of them all…
